Rest Stop - Fish Recipe


Time to stop again along this journey.  This time it is to post a new recipe.  Since I started the Repairvite phase of this journey and now that I am on the Clearvite phase and can't have beef or pork we am eating a lot more fish.  This recipe and picture come from the Sunkist Produce site.  The link is http://www.sunkist.com/recipes/steelhead-mandarin-in-parchment_1063.aspx  There are several good recipes on this site.

Steelhead Mandarin in Parchment Paper

Ingredients:
1/4 cup green olives, pitted and sliced
1 red bell pepper, thinly sliced
1 tsp fresh oregano, chopped
6 green onions with green tops, chopped
2 Sunkist lemons, juiced
3 Sunkist gold nugget mandarin oranges, one zested, all peeled and segmented
1/2 tsp salt
1/2 tsp freshly ground black pepper
4 each steelhead fillets, 6 oz
4 pieces parchment paper, 8"x 12" size

Preheat oven to 400 degrees.  Place 2 baking sheets in oven.

Instructions: (makes 4 servings)

Combine olives, red bell pepper, oregano, mandarin zest and segments, half of the green onions and lemon juice in a small bowl. Set aside.  Lay out parchment paper.  Divide half of the green onion evenly on one half of each of the parchment sheets.  Place a steelhead filet on each bed of green onions, season with salt and pepper.  Top with orange mixture.  Fold sheets of parchment paper over the top of the fish.  Fold edges of the parchment together, making small overlapping folds along the edge to seal tightly.  Place packets on heated baking sheets.  Bake 15 to 18 minutes.  Transfer packets to individual plates. Make a slice in the middle of the packet and tear paper open to reveal the fish.

Note: I have to omit the red bell pepper because I can not have peppers while I am did the Repaivite program and while I am doing the Clearvite program.

Rest Stop - Whole Wheat Can Destroy Your Health

Rest Stop - Start of Clearvite Phase

Today, I started the Clearvite phase of my journey.  This is going to be an interesting part of the journey.  This week I can't have beef or pork and I have been eating a lot of steak lately and now I can't have any.  I am glad I had ham with the family last week and a couple of burger patties Sunday.  I am using a new supplement and it doesn't taste to bad.  I take it once a day for the next three days, then twice a day for three days, then three times a day for a week and I then go back down the dose ladder finishing with once a day for the last four days.  I am also taking a mega dose of vitamin D and a mega dose of Omega 3.  I am also using a cream to help my Cortisol levels.  This is going to be an interesting three weeks.  I can add a banana, and beans to my diet also.  I hope to lose 20-25 lbs during this phase of the journey.

I did walk today and got Vick to do a mile at the mall tonight.  I will be getting her there a lot because I will her and me.  Vick is worried about her weight and is eating a little like I am.  We will see how she does and if I can teach her what I am learning.

Week Nine - Day One - Just a Thought


This could have been me before I started this journey with Dr.Scott.  Anyway, I had my appointment with Dr. Scott yesterday.  He is happy with the way things are going for me.  As we talked about the journey I am on, he reminded me that medical Dr.'s will always tell us that to lose weight we need to eat healthier, eat less and exercise but for some reason they don't teach us how to do those things.  Anyway, thiongs are going good with the journey.

Rest Stop - Chicken Fruit Salad

Normally this would be Week 9 Day One but due to the holiday it is a rest stop.  I will see Dr. Scott tomorrow.

I am a little discouraged today.  I only lost 3.5 pounds last week.  I am down to 352 not 350.  I was hoping to hit the fifty pound loss mark instead of forty eight.  Vick says I should be happy because I am doing so good.  Last Friday night we met some friends in Salt Lake and went to dinner.  Mike and Becky are very special friends to us.  They have encouraged me every time I have tried to lose weight.  They were excited for the progress I have made this time.  It was the first time Vick and I have been to dinner since I started this program.  We went to Sizzler and I had steak and salad bar and did okay.  I did eat white rice, a small portion, though.  I did make a decision to eat potato salad and baked beans yesterday.  I only had 1/2 a cup of  salad and less than that of beans. Dr. Scott has told me I can use the 90/10 rule and so I did for the first variation of what I can have in almost six weeks.  I guess 47-48 lbs in six weeks is pretty good.  I am back to eating only what I can.  I have also begun walking at the local mall.  I have to walk inside since I can't be outside.  I end up walking about a mile and a half right now.  Hopefully that will be increasing shortly by 1/2 mile increments.

Time for the next updated photos.  I wasn't sure I could see a change until I compared my starting photo with today's and I guess there is some difference.

The recipes I add are ones I have found and have used along this journey.  If the contain an ingredient I can't have, I either substitute it for one I can or I omit it altogether.




Skinny Grilled Chicken and Fruit Salad

Ingredients

10-12 ounces romaine lettuce
1/2 cup shredded carrots
1/4 cup shredded low-fat cheddar cheese(I have to omit this)
1/2 cup blueberries
1/2 cup chopped apples
1/2 cup sliced strawberries
1/2 cup mandarin oranges(I use fresh mandarins because I can't have canned fruit)
1 lb grilled chicken tenders
-Strawberry Balsamic Dressing
1 Tbsp Smuckers All Natural Strawberry Preserves reduced sugar
1 Tbsp Balsamic vinegar
3 Tbsp Extra Virgin Olive Oil
1/8 tsp salt
1/8 tsp pepper
(I just use Apple cider vinegar and lemon juice, since that is all I can have at this point)

Instructions

Wash and rinse romaine lettuce and pour into a large bowl.  Top lettuce with all the other ingredients, leaving out the chicken and mix well.  After salad is mixed, top with chicken and serve with Strawberry Balsamic Dressing.  For dressing, mix all ingredients in a small bowl and whisk for one minute.

Week Eight - Day Two - Smoothie recipe

Had my second visit with Dr. Scott this week.  While I was in the office I talked with a lady that is at the end of her six months.  She is not real happy, she has only lost 12 pounds.  She said, Dr. Scott said she would lose 25-30 during her journey.  She swears she followed the Dr.'s directions.  I know it is harder for women to lose weight than men but I have a hard time believing that following Dr. Scott's directions you would only lose 12 lbs.  I have been on this journey for actually 51/2 weeks and I am down almost 50 lbs and the lady I spoke with is a fairly large lady.  that being said I will continue doing what I am doing and see where this journey takes me.

I am still unable to start the Clearvite portion of this journey because the Dr. does not have the stuff I need.  They say They will have what I need by the time I go back next Tuesday.  If that is true, I will start Clearvite Wednesday morning and the phase will last about three weeks.  Until then I am eating like I was while I was on Repairvite.  I am averaging about 800-1100 calories a day.

I came across a recipe for a great smoothie.  It comes from the food blog 'Gimme Some Oven'   http://www.gimmesomeoven.com/easy-berry-smoothie/    It is called Easy Berry Smoothie.


Ingredients:
1 Cup Frozen Mixed Berries
1 Cup Coconut Water
1 Tbsp Chia Seeds (optional)

Directions:
Mix all ingredients in a blender until smooth.  Serve immediately.

I may add some spinach into mine next time.  As I can not have the seeds yet I leave them out.

Rest Stop - Healthy Choices at Restaurants

This can't be good, two rest stops in one day.  I just wanted to post about my evening.  Dr. Scott gave another seminar like the one I went to in March of this year.  I went to talk with the people in attendance about how much Dr. Scott has done for me.  I know some of them probably thought, as I did, I want to talk with someone that is actually in the program.  When I was in Dr. Scott's office on Monday, I told Dr. Scott he could give out the address for this blog or my email address to the people at the seminar.  He asked if I would like to come and say something to them and I agreed.  It was fun to do it and I hoped I might have touched someone that was in attendance.  I may never know but if one person decided to change their life because of what I said, it will be worth the time I spent there tonight.

On the way home my wife and I were talking about this journey and the fact I was able to wear a shirt tonight that I hadn't worn in a long time because it was to small for me.  It actually felt great to be able to tell the people at the seminar I was in a shirt that two months ago was to small.  Sometimes I have a hard time believing that I have really lost that much weight but when I put those two shirts on tonight, it hit home and I love it.  Anyway back to the discussion between Vick and me, as we talked about the changes I have been and continue to make, I realized this journey is about a spiritual change as much as a physical change.  I am learning to put my spirit in control of my body.  By that I mean that I am controlling my body by listening to my mind tell me how much and when I should eat, not eating because my stomach tells my to put some food in it.  That is quite a change for me.  I have to keep going now.

Just a quick note about a site I came across tonight.  This site will allow you to enter your zip code and find a restaurant with healthy choices.  You would have to look at the choices and see if they fit in the Repairvite or Clearvite programs but I think you could probably make one of the choices work.  I found a couple that would work and it is nice to know I can still take my wife out and keep on this journey.  The link to the web site is:  http://www.healthydiningfinder.com/home

Week Eight - Day One - End of Repairvite and Water Fast

The Dr. was back in the office today.  Had a good talk with him about the progress I am making.  I have lost 45 pounds in 50 days.  Not bad.  I know I have a long way to go.  I would like to lose about another 100-125 pounds.  The Dr. says he doesn't see why I shouldn't be down a total of about 100 pounds by the end of the year.  That excites me, to think I could be down 100 pounds by the end of the year.  Could actually be under the 300 pound mark.  I just realized, I lost 9 lbs this last week,  A big part of that was that fact that Thur, Fri, Sat was my modified water diet.  I only need to lose about a pound and three quarters each week from now through the end of the year to make 100 lbs for this year.  I believe it is very do able when I break it down that way.  I know that my success is because I am following the program Dr. Scott has laid out for me to the letter.  I will admit it has also taken a great deal of will power to accomplish these things.

I have completed 30 days of Repairvite and three days of the modified water fast.  I was going to start my Clearvite today but Dr. Scott is out of the things I need but should have them by the time I go back on Thursday.  I will be on Clearvite for 21 days and then I will be begin reintroducing foods back into my diet.  For what Dr. Scott said, the first thing will be eggs and gluten and dairy will be at the very last.  I told Dr. Scott I need to be back on dairy and gluten by August because I have dinner of homemade Ravioli planned and I don't want to give it up.  He just laughed and that worries me.  My visit to his office lasted about two and a half hours today.  It is a good thing I don't plan anything until at least three hours or so after my scheduled time at his office.

I need to take a minute, to post somethings I have been thinking as of late.  When I first went to listen to Dr. Scott's presentation, I went to keep my wife happy.  I figured it would all be a smoke and mirrors presentation.  I have tried all kinds of diets and programs for weight loss and I figured this would be no different, but now as I start my eighth week with Dr. Scott I feel totally different.  I know that Dr. Scott is in business to make money but I also know that he has a genuine concern for the people he is working with.  Thank you Dr. Scott for all you have done for me.

Rest Stop - Motivation

This will be a short rest stop.  Today I am back on real food.  The water detox is over, none to soon.  It really wasn't that bad.  If the real story be told I could go another couple days if I had too.  As I have read about this program I have seen water detox last for up to five days, but Dr. Scott said only three.  I will admit I got to the point that I didn't want anymore of the water over the last two days.  I ate a little roast beef, carrots and strawberries for breakfast this morning.  On the good side of the detox, I lost about 8 lbs for the week.  Official weigh in will be tomorrow.  On to the next phase, which I will find out about tomorrow with Dr. Scott.

Rest Stop - Fruit Salad with Cinnamon

Just wanted to take a minute and jot down a couple of things today.  It is my third day on the Modified Water Cleanse and things have gone fairly well.  I figured out that this phase is about 200 calories a day, and that is only because of the maple syrup.  I am supposed to drink a gallon of the modified water a day.  Usually I don't have a problem drinking a gallon of water a day and the first day on this phase was no problem.  Yesterday was a different story.  I could only get 3/4 of a gallon down.  That was all I wanted.  Today, Vick is after me to drink my gallon.  We will see.  Tomorrow I get to eat again and also add nuts and brown rice to my diet.  We will having dinner with friends to morrow and I am making fish taco and fruit salad with cinnamon.  I have had the salad before but tomorrow I will actually add the nuts.  The recipe comes from the web site: paleoplan.com.  http://www.paleoplan.com/

Fruit Salad with Cinnamon

Ingredients:
1 orange, peeled and diced
1 apple, diced
1/2 cup walnuts or pecans, chopped (optional)
1/2 teaspoon cinnamon

Directions:
Place  fruit in bowls.  Sprinkle with nuts and cinnamon.
This is for two people.

Week Seven - Day Two - End of Repairvite

Dr. Scott will be back in the office on Monday and boy will he be busy.  When I talked with his office staff today the shared with me why it has been so quiet, and that is because there have been no new patients and nobody that needed adjustments because they can not do them.  In other words starting next week it will get crazy again.  It still took me about an hour and twenty minutes to get through my routine.  I can't believe how much better my back is feeling, but then losing 35 lbs helps too.

My Repairvite journey ended yesterday.  I can't say I am gong to miss it, although the weed water actually began to taste sweet at the end.  I guess that may be because I have not had any sweet treats in 30 days.  I even made three desserts and didn't sample any of them.  I even went so far as to wash the little bit I got on my fingers and hands.  Vick is surprised at how well I am doing.  I am not sure why I am doing so well, I think there is some help from my guardian angels.  I started my three day modified water fast today.  I think this is going to be a bigger test than Repairvite was.  I get a gallon of water with the juice of five lemons, five limes and 4 Tablespoons of Grade B real maple syrup mixed in it.  It is 10:30 PM and I am down to my last 20 ounces.  I think I am going to be up all night, making trips to the bathroom.  Because on top of all this water I am still taking a water pill.  Boy the fun I am having.  But my daughter did say she could see a difference and that made me feel good.

I was listening to the radio today and heard about a study conducted by UCLA.  In the study the participants were between the ages of 12-18.  They bought lunch at both McDonald's and Subway.  When calories were totaled, less than 100 calories separated McDonald's and Subway.  Subway had less but more sodium.  The study was not scientific but very interesting.

I apologize to anyone that is offended or upset because of the jokes, sayings, pictures and anything that makes light of being overweight but I include them because it is a way for me to laugh at myself.  April 1st I was over 400 lbs and now I am under 365 lbs.  And it is just the beginning of this journey that will last the rest of my life.

Rest Stop - Eat Fish and Live Longer

Today is the last day of Repairvite.  In celebration  made Peanut Butter Rice Krispie Treats and before you jump to conclusions I did not eat one.  I took some to one of the schools I work at and the rest went to my grandchildren, with a small one for Vick because they are her favorite.

One thing I forgot to mention in my last Rest Stop was the fact that for some reason last Sunday (May 15th) was probably one of the hardest days I have had on this journey.  I am not even sure why because the night before mom and dad had an ice cream party and I wasn't even tempted.  Everybody had ice cream and cookies and I had an apple.  It wasn't that I fixed a special dinner for Vick on Mother's Day that made Sunday so tough.  We had Hawaiian Hay Stacks and it was okay with it.  I guess maybe it was just one of those days.  But I did not give up or in.

I think this maybe one of those weeks you have while trying to lose weight when your body plateaus and the weight loss is next to or non existent.  We will see next Monday.  And if it is, so be it.  I know I wont keep losing weight at the rate of 5-6 pounds a week.  Just so long as I keep losing.  Even 1 pound a week is 52 pounds in a year and my goal is to be down a total of 60-70 lbs by the end of the year.

A couple of interesting things I read in the recent past.  The first one is a quiz about fish.  There are seventeen questions and I got 15 of them right.  I know a lot about the health benefits of fish but we don't eat it often enough.  In the past we very rarely had fish but now it is at least every other week, working to at least weekly.  The link is:  http://

I wont be going sugar free either.  But I will definitely cut down considerably on my sugar intake.  I have a good friend, who's daughter lost over 70 lbs in the last year and one of the things she did was cut out sugar.  If sugar or any sweetener's are listed in the first five ingredients, she wont buy the product.  I will probably follow a program like that.  Even though I don't drink much soda and none for the last four weeks, I couldn't resist adding this picture.

Week Seven - Day One - Repairvite Journey

Beginning this week I will be seeing the Dr. twice a week for the next six weeks.  Wednesday I finish Repairvite and go a modified water diet for three days to detox and then starts Clearvite and reintroducing foods, that have been on the forbidden list, back into my diet.  I start with brown rice and nuts.

As you can tell by my weight chart I was only down 5 lbs last week.  When I say that to Vick, she says "pick up five pounds of butter and see how much you have lost.  I sure do Love her, she is my main cheerleader.  My grandson always prays for my diet. Love that kid too.  And I know there are several other that are in my corner and to them I say thank you from the bottom of my heart.

Actually, Monday was the 28th day of the Repairvite program and the 43rd day since I started with Dr. Scott.  When I went to his office for my usual treatment, I got a surprise.  Usually they have to use two extensions on the decompression bed and Monday they only used one.  I guess this journey is working.  It was also a tremendous boost to the ego.  I will continue with this journey for probably the rest of my life.  Because of Dr. Scott, I am finally putting to use the things I already knew about diet and I am alos learning a great deal more about diet.

It was kind of nice to be the only one in the office Monday.  It made the routine go quick.  A big thanks to the office staff too, they are great and I enjoy visiting with them.  They are always so patient, listening to the ramblings of a man old enough to be their grandfather.



Rest Stop - Visit with Dr. Hardman

I have had a couple of people that are following this blog get after me for being behind again and to them and everyone else I am truly sorry.  I am really behind this time around and I have nothing to blame it on except laziness on my part.  I don't know why I put off these last couple of posts because I enjoy this blog and writing to it.  It is very therapeutic when I wonder if this is all worth it.

Friday, I had a great visit with Dr. Hardman.  When see walked in the exam room, her comment was "I don't   why I need to see you, your weight is down and your lung function is up."  That made me feel good.  She is supporting me in this journey.  She went on to tell me as I was leaving that she has never given up on me and always believed in me and knew at some point I would catch the vision and my life would take a turn for the better.  Thank you Dr. Hardman, I know I have not always made it easy for you to keep faith in me.

Also, Friday afternoon I went to see my allergist and he is also cheering me on.  It is great to have the outside support of these medical professionals.  I know that what I am doing is outside the normal box for these people.

Week Six - Day Three - Water

The title means this is the third visit this week and this is the sixth week of this journey.  I have actually been on this journey for 39 days.  Starting next week I will be seeing Dr. Scott just twice a week and that will go for six weeks.  It is hard to believe I have been on this journey for six weeks.  Losing 30 lbs n 39 days  makes me happy.  I have six days left on Repairvite.  Then three days of a modified water fast and then I start Clearvite.  The good thing about starting Clearvite is I get to bring brown rice and nuts back into my diet.  I know as things get reintroduced into my diet I will not be losing weight at this rate and I know to continue at this rate is not healthy anyway.  My goal is to lose about another 30-40 lbs by the end of the year.  I need to start walking and that will be this week.  It should help the weight losing.

Now on to the visit at Dr. Scott's office today.  When I get there I am usually the only one there and it is nice.  It allows me to get through my routine fairly quickly.  My back is beginning to feel a lot better.

As you can see today I have been giving a lot of thought to water.  Since the only two things I can have at this point to drink are 1. Coconut Milk.  The coconut milk has to be below 12 in the sugar department and the type I have now has 6 grams of sugar in a serving.  So it is okay.  Vick puts a half of a cup in my smoothies and they taste great, especially if I add some cinnamon.  The other thing I get to drink is of course H2O.  I don't mind that at all because I have been drinking a lot of water for a long time.  I have a mug that holds 64 ounces of water and Dr. Scott says I should be drinking two of them everyday.  I usually don't have a problem doing that.

bit.ly/10tDc9D  I found this interesting due to the fact I work in the kitchens of the local school district.  We are supposedly trying to feed the kids healthier but I think we are missing the boat big time.  But then we can expect the school system to be totally responsible for teaching kids to eat better, parents need to get on board and feed the kids healthier at home.  One thing I have learned through this is I have been very guilty of consuming a great deal of extra sugar.  It has been 24 days since I have had any sugar and surprisingly I did not have a lot of with drawls.

Rest Stop - Coke Anti-Obesity Campaign

Went to see the PA I saw for my physical today.  About 6 weeks ago I had a physical and he wanted a follow up visit with me.  My blood pressure was a little high and I have some swelling in my lower legs. He was happy I have lost thirty pounds and when he asked me what I am doing to lose the weight, he was not impressed when I told him about Repairvite.  He told me to be careful because there a people who will try to sell me products that are not good for me. He said they would also make pie in the sky promises.  He wasn't interested in the address of this blog.  He wasn't impressed when I said that Dr. Scott in concerned with wellness and preventative medicine while as part of the medical establishment he is only interested in waiting until after the fact to help.  He just said be careful about the food restrictions.  I told him I feel better than I have felt for awhile and my wife and others have noticed the weight loss and tell me I am looking good.  My PA wants me to stay on my blood pressure meds, even though my blood pressure is back to where it has been for years.   He says it not only for my blood pressure but also for my heart as I have precursors to congestive heart failure.  He wants me to stay on my water pill also and come back and see him in 3 months. i am trying to get all these Dr.s to work together to help me get better and so far he is the only one that is dragging his feet.  But I will continue doing what I am doing because it is working.  I am smart enough to know I will not continue to lose weight at this rate, in fact my goal is to lose only another 30-40 pounds by the end of the year.

As a side note I saw this article today: 'Coke takes anti-obesity campaign global'.  Coca-Cola says it will make lower-calorie options and clear labeling more widely available around the world, intensifying a push against critics who say its drinks pack on the pounds.  Read more....http://

Week Six - Day Two - Thoughts About Repairvite

I need to get caught up on this blog and posts these things the day they happen.  I will get caught up today.

Went to Dr. Scott's office for the second of three visits this week.  Did the usual routine.  It takes about ninety minutes.  Dr. Scott will be out of the office until the 20th of May.. But that is okay because I know what I need to do.  His goal is that by the end of this program I am not to be tethered to him.  I am learning a lot about nutrition and how to live a healthier life.

As I have been on this program for three weeks I have to keep reminding myself why I am doing this.  It has taken me years of crappy eating to put on this weight and it going to take some time to take it off and rectify the problems.  I have to focus on the things I have and not on the things I don't have.  I don't want to be a victim of my body anymore.  I have to accept responsibility that it is my fault for the shape I am in.  Nobody forced me to eat  all the cheeseburgers, fries, pizza. and numerous treats.  I want to live to see my grand kids grow up and have kids.  To this end I say "I am going to do this and I don't care what anybody says and I will make it."

Week Six - Day One - Top 11 Superfoods That Can Save Your Life

This post is actually a day behind.  It was started on Moday and finished Tuesday, after my second visit of the week with the Dr.  This is the last week of my three visits a week with Dr. Scott.   Starting next week it will be twice.  The good news is I lost another seven pounds this last week.  That makes 28 pounds since I started Repairvite.  Later this week I go to see Dr. Hardman, my pulmonologist and Kevin Henry, my primary care.  Neither one of them know I am on this program, so I will be interested in what they have to say.  Vick says she can see my weight loss and Cath, my daughter, says she can see it in my face.  These things make it worth it.  I am thankful to the people that are following this blog and are supporting me in this.  It is going to be a long journey.  On Wednesday, May 15th I finish the Repairvite portion of the journey and the following Sunday I get to add brown rice and nuts back into my diet.  It will be nice to add something new.

I have lived 60 years without eating a couple of the Superfoods and even with the journey I am on, I don't see myself trying them in the next 60 years.

Just a thought:  The older you get, the tougher it is to lose weight because by then, your body and fat are really good friends.

Week Five - Day Three - Repairvite Journey

This is the 18th day of the Repaivite program.  In less than two weeks I will be done with it.  Oh happy day. On the up side I have lost about 27 lbs.  I will take that.  It hasn't been too bad watching other people eat things I can't.  I have to admit there have been temptations along the way, like the other day Vick wanted a sundae and I took her to her favorite sundae place, which is Burger Bar. (You have to be a local, to understand)   A Cheese Ben and fries sure sounded good.  And smelled good too.  But I fought the temptation and came home and had a smoothie.




Yesterday was the third visit to Dr. Scott's office this week.   I have one more week of three visits a week and the I will have two a week for six weeks.  I was the only one in the office for most of my visit yesterday. It was kind of nice.  My routine still takes about ninety minutes and that is without visiting with the Dr.  I was teasing his office help yesterday about being sadistic and enjoying inflicting pain on their patients and they just smiled.  None of them have been through the Repairvite program.  One of them is doing the Clearvite program.  They are really very pleasant and know what they are doing.  They have started following this blog.  They got a kick out of the pictures and said they usually don't get to see pictures and follow the weight loss of the people on program.

Week Five - Day Two - Fish recipe

I know this post should have been done last night but I just didn't get there.  Found out the Dr. Scott will be in Italy for a couple of weeks and by the time he returns I will be finished with my Repairvite Program and will have finished three days of a water fast.  I will drink nothing except water that has been enhanced with fresh lemons, limes and grade B pure maple syrup.  Sounds exciting doesn't it?  At least I will be finished with the weed water.  More about that as it happens.

My visit yesterday followed the same routine as all the others.  My back is actually feeling better.  It still hurts but I can stand a little longer and the pain isn't quite as severe.  I noticed in the last couple of days I can actually get in and out of my wife's Mazda a little easier.  May things are changing for the better.

Today I as talking with my daughter and realized that at 7:00 PM I had only eaten a turkey patty, an apple, two oranges and about 20 grapes all day.  Vick and I are helping with her kids as her husband is working late.  She was not happy when I realized this and that my calorie intake for the day was about 350. Vick told me to stop and buy a BIG steak my way home.  At first I wasn't going to do it but I could feel my self folding up and decided to do it.  Came home and cooked a nice large steak on the George Foreman. Add carrots, celery, olives and another apple to it and finished the day with about 1150 calories.  I felt much better after dinner except for some reason I am feeling very hungry now.  I have been averaging about 850-1000 calories a day until today.  the Dr. says I should be consuming at least 1500 a day.  We will see because I like as Vick says " I am wasting away to nothing."

This Fridays dinner will be fish again.  Vick wants to have fish at least weekly, if not more often.  Found a great recipe I am going to try:


Chili Rubbed Talapia
Chili Talapia

Ingredients:

2 Tbsp chili powder
1/2 tsp garlic powder
1/4 tsp salt
1 pound talapia fillets
2 Tbsp olive oil


Directions:

Combine chili powder, garlic powder, and salt on a plate.  Dredge fillets in the spice mixture to coat.  Heat oil in a large nonstick skillet over medium-high heat.  Add fish and cook until just opaque in the center, gently turning halfway, 5-7 minutes total.  Divide between four plates. Serve with vegetables.

This recipe is from July 2012 Eating Well magazine.  I will probably steam some carrots to go with my fish, maybe some broccoli.  If try the broccoli, I think Vick and Cath will die.  We will see.
